When you order a quarter beef, you are ordering all the cuts from half of a side of beef. Butchers split the carcass from head to tail at butchering time. This creates "sides" of beef. Quarter orders are two customers sharing one side of beef. The butcher makes sure that each customer on that side of beef gets equal cuts from the front and hind quarter. Quarter orders must follow the butcher's standard cut sheet so it is equal between both customers.
A quarter beef share will yield between 80 and 100 pounds of meat. You will receive, steaks, roasts, and ground beef. Typically, 50% of your meat will be ground beef, 30% will be steaks, and 20% will be roasts. This can vary depending on your cutting instructions. Final weight of meat can also vary from the estimation above, depending on cutting instructions.
A quarter share of beef will cost between $800 and $1000. This price includes your deposit, your butchering and cut and wrap fees, and your final cost to Hawkins Family Beef.

At butchering time, the butcher will tell us the hanging weight of the animal and your final invoice will be calculated. You will pay Hawkins Family Beef for the remaining cost of your share and the butcher will call your for cutting instructions and to let you know when your meat is ready for pick-up.
The hanging weight is the weight of the meat and bones of the carcass. Butchers use this weight to calculate their costs and we find it is the easiest and most accurate way for us to calculate costs as well.

We have eaten meat processed at each of these locations and are pleased with the quality of the butchering and packaging.
Due to variations in the different butcher shops and their pricing and practices, we offer different pricing for different butchers. Meat processed at Boston Beef House or Greenleaf Custom Meats is $4.75/lb. on the hanging weight. Meat processed at Greenfield Custom Meats or Northwest Premium Meats is $5.00/lb. on the hanging weight.
When you buy in bulk you get everything from the animal! That means that you'll get all varieties of steaks and roasts. Some examples include: t-bone, New York, Ribeye, tenderloin, cube, stew or kabob meat, skirt, flank, tri-tip, ribs, ground beef, hamburger patties, rump roast, and more!
You'll also have the option to get the organs of the animal including the: tongue, heart, liver, kidneys.
When you talk with the butcher to give cutting instructions, let them know if you are interested in bones for soups, bone broth, or for your dogs. You can also request the suet to render into beef tallow.
*different butchers use different cutting techniques. Make sure you discuss your wishes with them and ask questions about what they offer.
**for quarter orders, one customer will get the brisket and the other will get the tri-tip as these cuts only occur once per side of the animal.
